I strongly believe that, since we all want to get fairly paid for our work, we should also pay others what it's fair. That's the main reason why, if I can find fair trade chocolate instead of any other brand, I will buy it. And I do that with chocolate or with any other ingredients.
In Spain it has taken longer for these products to be in supermarkets but everyday it's easier to get them. The biggest problem I've found is that, for example, fair trade sugar isn't with other brands of sugar but in a special section in the supermarket that nobody goes to so it's really hard to make people buy these products and become aware of how important fair trade is.
I do believe that, if we all make small contributions like this one, we will make the world a fairest place. That's why I wanted to join alternativa 3's initative when I saw they were making a contest for a fair trade Easter cake.
I hope you like it as much as I liked making it.

Ingredients for the chocolate gâteau:
140 g butter
280 g fair trade chocolate
8 eggs, separated
180 g, plain flour
280 g, fair trade sugar
2 teaspoons, rum for flavoring
2 teaspoons baking powder
100 g fair trade marmalade (in my case I used mango, passion fruit and pineapple)
100 g fair trade marmalade (in my case I used mango, passion fruit and pineapple)
Preheat the oven to 150ºC. Grease two 23-cm cake tins with butter. In a pan, melt the chocolate with the butter over a very low heat. Remove from the heat and stir in the egg yolks, one by one, followed by the flour previously mixed with the baking powder and sugar. In a separate bowl, whisk the egg whites and flavoring (rum) to stiff peaks. Fold into the chocolate mixture, ensuring everything is evenly incorporated. Divide in half and pour each part into one of the prepared cake tin and bake for 50 minutes. When the cake comes out of the oven, allow to cool. Put in between the two layers one layer of marmalade previously melt if necessary, then cover the outside of the cake with the chocolate icing.

Ingredients for the chocolate icing:
90 g fair trade chocolate, chopped
90 g butter, chopped
3 very fresh eggs, separated
In a small pan, gently melt the chocolate and butter in a double boiler. Remove from the heat, allow cooling and then mix in the egg yolks. Whisk the egg whites to soft peaks and fold into the chocolate mixture. When ready to use, spread the icing over the cold cake with a palette knife.
The top part has a chocolate egg that I bought with coconut around it. The coconut was baked at 180ºC for about 15 minutes with 2 tablespoons of the same rum I used for flavoring the cake. Also the spirals on top were made with Hotly Spiced's frosting.

What a beautiful looking Easter cake Mireia and I'm so glad you made it using the right kind of chocolate. That kind of chocolate has only been available in Australia recently and I do try to buy it when I can; but, like you say, it's often hidden and you have to look out for it xx

ResponderEliminarReally stunning from the moist cake inside to the elegant relief pattern of the icing and the spirals on top. I have no doubt about the amazing flavor either. Great job!
ResponderEliminarBeautiful cake... and thanks for bringing attention to the fair trade issue.
EliminarSadly we don't get fair trader chocolate here, if we did I would buy it too.
ResponderEliminarI love the waves on top of your cake Mireia, the whole cake is professionally done :)
GRANDEE!
ResponderEliminargood for you on the FT issues. I think most people in the U.S. don't understand the real cost of food, but hopefully that is changing. my kids both get it, so maybe the next generation is going to do a better job than we have.
