Cream Cheese Chocolate Cake/Pastel de chocolate y crema de queso

(¡Receta en español abajo!)


First of all I want to say I have forbidden myself to look at blogs for the next couple of weeks, that's why I've been absent in the blogsphere, Monday was my first exam and I'll be over in a couple of weeks, I can't wait to be done but until then I have to focus on finishing my degree properly!!!

Anyway, I baked this about a month ago but I totally forgot to post it and, since I'm not baking that much these days because of my exams (that will end on June!), I do want to share with you a great recipe.

If you read my blog (which I don't think many people do) you've probably read about Charlie from Hotly Spiced. She's a great blogger and cook that, besides being extremely talented with her pictures and words, also posts almost every single day (I have no idea how she does it!)


I found this recipe in her blog a few months ago and I put it in my pinterest. And then, one day that I wanted to make something new but that I was sure would be good I picked this recipe.

And it was good, really, really good. I actually was going to change the sour cream for yogurt as I have no idea where to find it in Spain but, instead of yogurt I accidentally put cream cheese. I have no idea how it would have tasted with yogurt but with my accidental substitution it was amazing!!!

I decorated it with buttercream roses on top and it was gone in a sitting (of course there were about 15 people there, we eat a lot at my house but not that much!!!)

You can see the original recipe in her blog, if you want to make her version it's probably amazing, if you wanna try it with cream cheese (which I can assure if good) you just need to substitute the amount of sour cream for cream cheese. Here's the recipe:

Cream Cheese Chocolate Cake
Cake
1 1/2 cups plain flour
3/4 cup cocoa powder
1 1/2 tspns baking powder
3/4 tspn baking soda
1/2 tspn salt
1 cup sour cream
1/3 cup water
2 tspns vanilla essence
1 cup unsalted butter, softened
1 1/3 cups firmly packed light brown sugar
3 large eggs

Pre-heat oven to 180C/375F.

Grease and flour two 9-inch (22cm) round cake pans, knocking out excess flour. Sift together flour, cocoa powder, baking powder, baking soda and salt.

In a small bowl whisk together sour cream, water and vanilla.

In a large bowl, with an electric mixer, beat together butter and sugar until light and fluffy. Beat in eggs, 1 at a time, beating well after each addition.

Add some flour mixture to butter mixture. Mix well. Add some sour cream mixture. Mix well. Continue this process, ending with the flour mixture. Beat until the batter is smooth. Divide batter between prepared pans and smooth the tops.

Bake layers in middle of oven 25 -30 minutes until cooked.

Cool cakes in their pans on racks for 10 minutes. Turn out onto racks to cool completely.

Frosting:
3/4 cup butter, softened
1 cup cream cheese, whipped
4 oz unsweetened chocolate, melted and cooled (melt over hot water)
1 tspn vanilla
2 1/2 cups icing sugar

Using an electric mixer, beat together butter and cream cheese until light and fluffy. Add remaining ingredients and beat until combined. Place one cake on a large plate and spread with about 3/4 cup frosting. Put the second cake on top, then spread remaining frosting over the top and sides.





Para empezar quiero decir que me he prohibido a mi misma mirar blogs durante las próximas semanas, es por ello que he estado ausente en la blogsfera, el lunes fue mi primer examen y acabaré en un par de semanas, tengo muchas ganas de acabar pero hasta entonces tengo que centrarme en acabar mi carrera!!!

Hice este pastel hace como un mes pero se me olvidó totalmente ponerlo en el blog así que, como estos días no estoy cocinando mucho (periodo que terminará en junio) quiero compartir con vosotros una receta genial.

Si eres de los que lee mi blog (que no creo que haga casi nadie) probablemente me has oído hablar de Charlie de Hotly Spiced. Es una blogger y una cocinera genial que, además de tener mucho talento con sus fotos y palabras, postea cada día (no se cómo puede hacerlo!).




Encontré esta receta en su blog hace unos meses y lo puse en mi pinterest. Entonces, un día que quería hacer una receta nueva pero que estuviese segura que estaría rica, elegí esta receta.

Y estaba rica, muy, muy rica!!! De hecho iba a cambiar la crema agria de la receta por yogurt porque era el ingrediente que leí que sería mejor como sustituto pero, en lugar de yogurt puse accidentalmente philadelphia. No tengo ni idea cómo hubiese sido con yogurt pero con mi sustituto accidental estaba impresionante!!!!

Lo decoré con rosas de buttercream por encima y en una sentada nos lo terminamos (por supuesto eramos 15 ahí, comemos mucho en mi casa pero no tanto!!)

Podéis ver la receta en su blog, si queréis hacer su versión probablemente es impresionante, si queréis probarla con philadelphia os aseguro que está buenísima también, sólo hay que sustituir la cantidad de crema agria por philadelphia!. Aquí tenéis la traducción:

Pastel de chocolate y crema de queso
Base
1 1/2 tazas de harina de trigo
3/4 taza de cacao en polvo
1 1/2 cucharaditas de levadura
3/4 cucharadita de bicarbonato de sodio
1/2 cucharadita de sal
1 taza de crema de queso
78 ml de agua
2 cucharaditas esencia de vainilla
226 gramos de mantequilla sin sal, suavizada
1 1/3 taza bien compacta de azúcar moreno
3 huevos grandes

Pre-calientar el horno a 180C/375F.

Engrasar y enharinar dos moldes de 22cm.
Tamizar juntos la harina, el cacao en polvo, la levadura, el bicarbonato y la sal. En un bol pequeño mezclar la crema de queso y la vainilla. En un bol grande, con una batidora eléctrica, batir la mantequilla con el azúcar hasta que esté ligera y esponjosa. 
Agregar los huevos, 1 por 1, batiendo bien después de cada adición.

Agregar un poco de la mezcla de harina a la mezcla de mantequilla. Mezclar bien. Agregar un poco de la mezcla de la crema de queso. Mezclar bien. Continuar con este proceso, terminando con la mezcla de harina. Batir hasta que la masa esté suave.

Dividir la mezcla entre los moldes preparados y alisar la parte superior.

Hornear las capas en el centro del horno 25 -30 minutos hasta que esté cocido. Sacar del horno y esperar 10 minutos. Sacar la mezcla del molde y dejar que enfríe sobre una rejilla.

Frosting
17 gramos de mantequilla ablandada
1 taza de crema de queso
113 gramos de chocolate sin azúcar, derretido y enfriado
1 cucharadita de vainilla
2 1/2 tazas de azúcar glas

Utilizando una batidora eléctrica, batir la mantequilla y la crema de queso hasta que esté ligera y esponjosa. Agregar los ingredientes restantes y batir hasta que se mezclen. Colocar una parte del pastel en un plato grande difundir parte de la mezcla por encima. Colocar la segunda parte por encima y extender después la cobertura restante sobre la parte superior y los lados.

I think the sour cream/cream cheese substitute would work really well. If we were a little closer I would love to come over and try a slice. Best wishes for your exams.   15. Bueno, a veces nos pasan errores con los ingredientes, sobre todo si nuestra menta anda en otro lado. Pero qué bueno que el uso del queso crema igual hizo que te quede rico.
