TWD/BWJ: Hungarian shortbread

I just got back from my trip a couple of hours ago. I had an amazing time but I’m really exhausted. Still, since I had already made this recipe next week, I thought I would better post it on the date we’re supposed to, yes, I’m a freak. My trip was great but now I have to go back to class I have a lot of things to do and I don’t want to…

Back to the recipe, I had never made shortbread before since I always thought it would be too sweet for me. It turns out it was sweet, really sweet but amazing too. I have never seen or tried rhubarb in Spain and as I didn’t have time to look for it I just used some apples and plums for the filling. I just put everything into a saucepan and let it soften with water and a little sugar on it and then I mashed it with a whisk. The only thing I would have added maybe would have been some raspberries to add a little bitterness on it.

My dad said it was one of the best things I had ever made, I’m not so sure about it but it was really, really, really good. You can find the original recipe in the following blogs: eatdrinkmanwomandogscat and in 1smallkitchen. I’ll try it sometime with rhubarb!!!

  1. You made your father's day! How great!
Your apple and plums jam sounds delicious and together with your shortcakes it makes THE perfect dessert!
If you have the possibility to buy rhubarb once, you should try it, though: I love it (but it's my opinion.

And now I let out my disappointment:
I've waited and stayed up until midnight to post the recipe and the LYL - But the LYL post on TWD'S blog does not exist (yet).
Have I missed it - or isn't really there?
    What a pity!
Sorry for letting out my "frustration" here <3

  2. Your father gave you a nice compliment!
Your cake looks so delicious. I love the close up photo showing the crumbly texture. Maybe one day you will get to try rhubarb. It really did taste quite nice in this recipe, although it did not have the bright pink color shown in the cookbook.

  14. You are a busy gal, Mireia. Using the apples and plums, just softening them, was a great idea. Would this shortbread be good in the Fall with just an apple filling. Yes, this was a rich pastry and the next time I make it, I will try to cut some butter and sugar from it. May go easy on the confectioner's sugar also. Study hard but keep baking. It's fun to have you in this group.
