Do you know that feeling when 12 cupcakes that just got out of the oven fall into the floor?? Well, I do. Luckily I had about 15 more already done to take to a friend's bday. The onces that fell were for my family so they stayed with us anyway and we ate them all, yes, that's how we roll.
This is a great recipe that I got from a cake that I found in Alma's blog. The buttercream is a little different because I didn't have enough amount of cream cheese or nutella (and I was too lazy to go to the store) so I just made my own buttercream. The cupcakes are really good but I am still working to find the perfect chocolate cupcake and, although close, this isn't it.
I still recommend you to try it as we all enjoyed it a lot!!! Sorry for the picture, I was just still shocked that I lost 12 of them... You can find the translated recipe below:
Chocolate cupcakes with nutella and cream cheese buttercream
Cupcakes
100 ml soft olive oil
1/2 teaspoon of vanilla extract
80 ml milk
180 gr sugar
2 medium eggs
1 egg yolk
115 gr all purpose flour
25 gr cocoa
1 teaspoon baking powder
Preheat the oven to 180ºC
Mix olive oil with sugar until smooth. Add eggs, one at a time, mixing well after each addition. Add egg yolk. In a separate bowl sift flour with cocoa and baking powder. Mix milk and vanilla extract in a glass. Mixing at low speed add half the flour to the oil mixture, then add the milk and finally the rest of the flour.
Spread in the baking pan and bake for about 22-25 minutes.
Let them sit for about 5 minutes in the baking pan and then allow them to cool in a cooling rack.
Buttercream
200 gr icing sugar
50 gr butter
2 tablespoons milk
100 gr cream cheese
85 gr nutella
Beat butter until creamy. Sift icing sugar. Beat with the butter and the milk until it is fully incorporated. Add cream cheese and beat, first at low speed and then increase the speed until the mix is creamy. Add nutella and beat for 2 more minutes.

Conocéis ese sentimiento, cuando 12 cupcakes recién sacadas del horno caen al suelo?? Bueno, yo si. Afortundamente tenía otras 15 más hechas para llevar al cumpleaños de un amigo. Las que cayeron al suelo eran para mi familia así que se quedaron con nosotros y nos las comimos todas, sí, así funcionamos en mi casa.
Esta receta la saqué de un pastel del blog de Alma. El buttercream es un poco diferente al suyo porque no tenía suficiente nutella o queso cremoso (y no me apetecía ir al supermercado) así que simplemente hice mim propia buttercream. Los cupcakes están muy ricos pero aún estoy trabajando para encontrar la receta perfecta de cupcakes de chocolate y, aunque cercana, esta no es la ganadora.
Aún así os recomiendo que la probéis porque nosotros los disfrutamos!!! Lo siento por la foto, seguía en shock porque había perdido a 12 cupcakes por el camino....
Cupcakes de chocolate con buttercream de nutella y queso cremoso
Cupcakes
100 ml de aceite
de oliva suave (u otro aceite suave)
1/2 cucharadita de
extracto de vainilla
80 ml de leche
semidesnatada
180 gr azúcar
blanco
2 huevos medianos
1 yema de
huevo
115 gr de harina
25 gr cacao
1 cucharadita de
levadura Royal
Precalentamos
el horno a 180º.
Batimos el
aceite con el azúcar hasta que la mezcla sea homogénea. Añadimos los huevos,
uno a uno, batiendo hasta que se integren y, a continuación, añadimos la yema. En otro
bol, tamizamos harina con levadura y cacao. En un vaso, mezclamos la
leche con el extracto de vainilla. Batiendo a
velocidad baja, añadimos la mitad de la harina a la mezcla del aceite, a
continuación la leche y finalmente el resto de la harina.
Poner en una bandeja para cupcakes con 12 cápsulas de
papel y hornear unos 22-25 minutos.
Dejamos enfriar unos minutos en el molde y luego por
completo sobre una rejilla.
Buttercream
200 gr de azúcar glas
50 gr de mantequilla
2 cucharadas de leche
100 gr de queso cremoso
85 gr de crema de cacao
Batir la mantequilla hasta que esté cremosa. Tamizamos el azúcar glas. A continuación, lo batimos con
la mantequilla y la leche hasta que se integre. Añadimos el queso, que ha de
estar frío, y batimos, primero a velocidad baja y luego aumentando la velocidad
hasta que la mezcla sea homogénea y cremosa. Añadimos la nutella y batimos 2
minutos más.

ResponderEliminarLook delicious, Mireia, and I would have eaten them right off the floor myself. I have a 1 Kg (yes, 1 Kg) jar of Nutella in my cupboard. Unopened. I may give this frosting a go.

ResponderEliminarComo decimos en casa, lo que no mata engorda, así que si se cae al piso le damos una limpiadita con la mano y a la boca...ja,ja,ja...pero claro, eso se queda en casa, así si bien la familia se queda feliz porque se quedó con algo que no esperaba, nosotras nos quedamos muertas de cólera porque ya no tenemos qué llevar y hay que volver a hacer la receta, menos mal que esta vez tenía más...!!!
