Apple Cake with Cinnamon Sugar Topping/Bizcocho de manzana con topping the azúcar y canela

I've been working every summer since I was 18 and I'll be working until I retire so a while ago I decided this would be my summer off, I would spend it in the beach, with my friends and with my family. I needed some time to rest. That's what I said to everybody, and I was absolutely sure of that until yesterday.

The truth is that really haven't made much effort to find a job for next year, I'm just not in the mood and the very few interviews I've had didn't really motivate me. Last week I sent an application randomly, they called me two days after that, I had an interview yesterday and I'm starting Monday. And I wanted a summer off, great job!!!

At least now I'll have money to buy baking stuff and it's a great company and the conditions are pretty good so I'm happy (besides it's 10 minutes from my place and my gym is 2 minutes away!)

Anyway, let me share with you an amazing recipe today. It's from Magnolia's Bakery Cookbook and it's moist, quick, easy and perfect for a breakfast treat.

You should really give this a try!!!!!

Apple Cake with Cinnamon Sugar Topping (Magnolia Bakery)
2 Cups All-purpose Flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup vegetable oil (canola)
1 cup sugar
2 large eggs, room temperature
1 cup milk
1 teaspoon vanilla extract
20 oz apples, sliced, patted dry
1/2 cup sugar mixed with 1 teaspoon cinnamon

Preheat oven to 325 degress

Grease and lightly flour a 10-inch tube pan.

In a small bowl, sift together the flour, baking powder, and salt. Set aside.

In a large bowl, on the medium speed of an electric mixer, beat together the oil, sugar, and eggs until light and thick, about 3 minutes. Add the dry ingredients in three parts, alternating with the milk and vanilla, beathing after each addition until smooth. In a separate small bowl, toss the apples with half of the cinnamon-sugar mixture, then stir half of the apples into the batter. Pour the remaining batter into the prepared pan. Drop the remaining apples on top of the batter and sprinkle with the remaining cinnamon sugar. Bake for 60-70 minutes, or until a cake tester inserted in the center of the cake comes out clean. Let the cake cool in the pan for 1 hour, then remove from the pan and cool completely on a wire rack.
He trabajado todos los veranos desde que tenía 18 y estaré trabajando hasta que me retire así que hace un tiempo decidí que este iba a ser mi verano libre, lo iba a pasar en la playa, con mis amigos y mi familia. Necesitaba un tiempo de descanso. Es lo que decía a todo el mundo y estaba totalmente segura de ello hasta ayer.

La verdad es que realmente no he hecho mucho esfuerzo para encontrar un trabajo para el año que viene, realmente no me apetece y las pocas entrevistas que tuve me desmotivaron aún más. La semana pasada envié mi curriculum a una oferta un poco al tun tun, a los dos días me llamaron, ayer tuve una entrevista y el lunes empiezo. Y quería un verano libre, genial!!!

Por lo menos ahora tendré dinero para comprar cosas de cocina y la compañía me gusta y las condiciones también están bien así que estoy feliz (además que está a 10 minutos de mi casa y a 2 minutos de mi gimnasio lo cual es un lujo!)

En fin, dejadme compartir hoy con vosotros una receta increíble. Es de Magnolia's Bakery Cookbook no es nada seco, es rápido, fácil y perfecto para el desayuno.
Realmente deberíais probarlo!!!!

Bizcocho de manzana con topping the azúcar y canela (Magnolia Bakery)
250 gr harina
2 cucharaditas levadura
1 cucharadita sal
160 ml aceite vegetal
225 gr azúcar
2 huevos grandes, temperatura ambiente
240 ml leche
1 cucharadita extracto de vainilla
566 gr manzanas, en rodajas
115 gr azúcar mezclado con una cucharadita de canela

Precalentar el horno a 160ºC

Engrasar un molde rectangular de unos 25 cm de largo.

En un bol pequeño, mezclar la harina, la levadura y la sal. Poner aparte.

En un bol grande, a velocidad media, mezclar el aceite, el azúcar y los huevos unos 3 minutos. Añadir los ingredientes secos en tres partes alternando con la leche y la vainilla mezcladas previamente, batiendo tras añadir cada vez. En un bol separado pequeño, mezclar las manzanas con la mitad de la mezcla de la canela y el azúcar. Añadir la mitad de las manzanas a la masa. Poner la masa en el molde. Poner el resto de las manzanas encima del bizcocho y poner por encima la mezcla de azúcar y canela restante. Hornear durante 60-70 minutos o hasta que esté hecho por dentro (meter un cuchillo y asegurarse que sale limpio). Dejar el pastel enfriarse durante una hora, sacar del molde y dejar enfirar compeltamente en una rejilla.

Disfrutar!!!!

Secondly, congratulations on finding a job even though you didn't want nor were you looking for a job. I have been wondering about you and your future since I keep hearing that 52% of Spanish young people are unemployed. Tell me that is not true. In America, our apples get ripe in the early Fall so I will definitely make this apple cake then. I have only one good recipe for apple cake and that one is made in a bundt pan.

  9. What a great looking cake. I love apples and cinnamon together. Congrats on your job. The same thing happened to me. I wanted to have a few weeks off but I applied for a job over the phone, was asked to come in that afternoon and I started the next morning. I think worked through the entire summer, then started nursing. I still regret not having that summer with my friends but when opportunity knocks, you sometimes just have to go with it. It sounds like this job would have been hard to turn down, with the benefits and the location. Good luck settling in xx

  24. Se espectacular ese queque, y con lo que me gustan las manzanas, tengo que hacerlo de todas maneras.
    Y bueno, así llegan las cosas, a veces no tenemos mucho tiempo para el descanso, pero como bien dices, el dinero no te caerá mal.
